Ginger & Peach Turkey Curry? I know, you think I’m either a genius or a crazed mom who started throwing odd-ball things into a skillet in a desperate attempt to feed her kids.
While I’ve been guilty of the latter, I’m siding with genius on this one. My bff will be so proud of me (once she READS THIS). She is a self-pronounced genius and will love seeing me rise to the occasion and call myself as such.
The Brains Behind The Curry
I constantly have recipe ideas floating around in my genius mind. Sometimes they take months of contemplation to come into existence. Then there are times I make something on the spot-in the moment of creativity an excitement!
This dish’s spark of creation came about like this.
“I now have freshly ground turkey in my freezer, yay!”
“I also have homemade canned peach jam.”
“What if I put those two together….”
“If I did, I’d need to add zip and pizzazz.”
“I know, ginger AND curry!”
“Oooh, and since it’s a savory-sweet I should throw in sweet potatoes and bell peppers and onions…”
You see, one thing led to another and I had to let it happen. I’m a huge fan of curry, but I have little children who don’t like the heat of curry. So when making it at home, I try to add items in to distract from the heat, but still let my kids get used to the flavor of curry. That’s what this dish does!! The flavors all compliment each other in a surprising, almost creamy texture.
This dish is a “one-pot-wonder” too. Everything gets added to one big skillet. It’s a complete meal too! Nothing could be better!
Let’s encourage summer to end and fall to grace us with its presence by making this for dinner 🍁🍂🌿
