Ginger & Peach Turkey Curry? I know, you think I’m either a genius or a crazed mom who started throwing odd-ball things into a skillet in a desperate attempt to feed her kids.

While I’ve been guilty of the latter, I’m siding with genius on this one. My bff will be so proud of me (once she READS THIS). She is a self-pronounced genius and will love seeing me rise to the occasion and call myself as such.

The Brains Behind The Curry

I constantly have recipe ideas floating around in my genius mind. Sometimes they take months of contemplation to come into existence. Then there are times I make something on the spot-in the moment of creativity an excitement!

This dish’s spark of creation came about like this.

“I now have freshly ground turkey in my freezer, yay!”

“I also have homemade canned peach jam.”

“What if I put those two together….”

“If I did, I’d need to add zip and pizzazz.”

“I know, ginger AND curry!”

“Oooh, and since it’s a savory-sweet I should throw in sweet potatoes and bell peppers and onions…”

You see, one thing led to another and I had to let it happen. I’m a huge fan of curry, but I have little children who don’t like the heat of curry. So when making it at home, I try to add items in to distract from the heat, but still let my kids get used to the flavor of curry. That’s what this dish does!! The flavors all compliment each other in a surprising, almost creamy texture.

This dish is a “one-pot-wonder” too. Everything gets added to one big skillet. It’s a complete meal too! Nothing could be better!

Ginger & Peach Turkey Curry

This dish is great by itself as a complete meal or over rice!

Ingredients

  • 1 lb. ground turkey
  • 1 T olive oil
  • 1 cup peach jam (look for low to no sugar added)
  • 1/2 cup water
  • 2 tsp fresh grated ginger
  • 1 1/2 tsp yellow curry powder
  • 2 sweet potatoes *click here to learn more about sweet potatoes vs. yams!
  • 1 bell pepper
  • 1/2 white onion
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Heat the olive oil in a large skillet that has a lid. You will need the lid later in this recipe.
  2. Brown the ground turkey in the skillet on medium high heat.
  3. While the turkey is cooking, peel and dice the sweet potatoes. Finely cut or grate the ginger. Dice the onion and bell pepper as well.
  4. Add the ginger, peach jam, water and sweet potatoes to the turkey. Turn the heat down to medium.
  5. Sprinkle in the curry, salt and pepper.
  6. Put the lid on the skillet and turn the heat down to low or even simmer.
  7. Let the dish steam for 7 minutes.
  8. Now add in your onion and bell pepper.
  9. Stir it all together and put the lid on for 5 more minutes.
  10. Remove from heat and serve immediately.
