Mother’s Day Brunch

Brunch is my second favorite meal, first being brinner (when you have breakfast for dinner). The idea of assembling your favorite breakfast foods and putting them all on one plate??!? I’m in.

I love Mother’s Day. I’m still at the age where it’s more about my husband and I taking time to bless our moms and less about me being the mom. Don’t get me wrong, the littles still get me cute presents and Thad tries to rally them to make me breakfast in bed, but usually that looks like me laying in bed waiting an extra hour, listening to them cook in the kitchen and desperately wishing I could just help them. It’s adorable.

This year we will be driving home from our youth leader retreat on Mother’s Day, so we are planning special things for our moms around the weekend instead of on the weekend.

Whatever your plans are for Mother’s Day, I’m sure food is involved. That’s why I put together a little brunch menu for you!

Start with Mimosas! Whether your mom is into a little bubbly or would rather just have some fresh squeezed OJ with sparkling water added, mimosas are always a hit.

This One Pan Frittata. is filled with veggies, bacon and eggs all mixed together in the perfect way.

Grab your waffle maker and make some Cassava Flour Waffles! These are a guaranteed hit with Mom and the whole family!

My Bon Appetit Paleo Banana Bread and my Paleo Blueberry Muffins are a great pairing with the waffles and frittata.

For a side dish throw together some fresh berries from your favorite farmer’s market stand and top them with a Coconut Whipped Cream.

 

Don’t forget to add a few special touches like fresh cut flowers, tea or bring out the fancy plates! Moms dig that kind of stuff. I’m especially a sucker for hand written notes from my kids and husband. 💕
