This is for sure the greatest chicken nugget recipe to ever be created. At least according to my boys. I’ve made chicken nugget recipes before but never really came across anything  worth making a second time. My kids have come along way since 2013 when we changed our diets. They used to oodle and awe over McDonald’s and Burger King whenever we drove by one. Okay, so did we.

This new healthy lifestyle is great and all, but sometimes you just crave something from your former life. For us, these chicken nuggets bring that fondness back, without the bad ingredients and bloated feeling after a meal.

One thing I’ll stress about these is that it matters what kind of pan you use. If you use a cast iron pan, you may find the need to add more oil between batches, simply because the pan itself is absorbing oil too.

Ingredients

Instructions

  1. Using kitchen grade scissors, cut the chicken into "nugget" size pieces.
  2. Add all breading ingredients directly into your gallon size ziplock bag.
  3. Whisk your eggs in a shallow bowl.
  4. Set up all three next to your stove top to get ready for frying.
  5. Add 2T of oil to a large pan with high sides. I personally like this pan. Turn the heat onto medium/high.
  6. Using tongs or a fork, place about 10-15 (depending on the size of your pan) nuggets into the egg mixture. Remove, and then put into your ziplock bag.
  7. Now seal the bag and shake it up.
  8. Open the bag, take the nuggets out and place them on the hot frying pan.
  9. Flip the nuggets after about 5 minutes or less. Wait another 3-5 minutes for the second side to cook through.
  10. Using your tongs, get your nuggets onto a plate and begin your next batch of deliciousness.
  11. Repeat until all nuggets are cooked and ready to eat!

Notes

These nuggets freeze really well. I like to make a double batch so I can pull them out anytime and heat them up for my kids, and even for myself!
