Applesauce Oatmeal Muffins


20160322_170416-1These are my go to for entertaining or a fast breakfast. Whether I have a friend stopping by, kids coming over for a play date, or a meeting scheduled. These muffins are quick and easy, and oh so tasty!

Applesauce Oatmeal Muffins

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: 18 muffins

Serving Size: 1 muffin

    Streusal Topping
  • 2 T butter (softened)
  • 1/2 cup gluten free oats
  • 2 T coconut sugar
  • 1/2 tsp cinnamon


  1. Preheat the oven to 400 degrees. Spray your muffin pans or line them with paper liners.
  2. For the streusal topping, mix the 2 T of softened butter, 1/2 cup oats, 2 T coconut sugar and the 1/2 tsp sugar in a bowl. The mix should be slightly crumbly. Set aside.
  3. For the muffin, mix the flours, oats, sugar and other dry ingredients together in a large bowl.
  4. Add in the wet ingredients to the dry mix. Be careful not to over mix.
  5. Spoon your muffin mix into the greased/lined pan.
  6. Bake your muffins for 12 minutes at 400 degrees.
  7. Remove the muffins from the overn, and top them with your streusal mix.
  8. Bake another 5-8 minutes.
  9. Allow to cool completely.
  10. Enjoy!


Remember: Gluten Free oats can be considered paleo for some people, but not always for others. Do what works for you!
