Gluten Free Salmon Cakes

Simply beautiful. This week we are basking in the glory that is vacation. The nine hour drive was well worth the views and relaxation. I’m just sitting down in our little rental house in the calm while the boys play Lincoln Logs (something every parent should bring on vacation) and the 2 year-old is napping due to a full day of exploring beaches and collecting shells. My husband is grilling up some salmon cakes and I’m waiting for the timer to go off on the oatmeal chocolate chip cookies. Sounds pretty rad right?

While I can’t take you all on vacation with me, I can give you our new favorite fish recipe! My dear friend Amelia created this one in her kitchen over the summer and kindly let me share it with you. We fell in love with the combination of fresh seasonings and delicious salmon.

My kids also think anything in the shape of a patty is amazing (they’re not wrong) so this one has been very kids friendly for all 3 of our kiddos. Personally I love these served over brown rice and steamed veggies. My husband likes doing veggie kabobs with them which is fun too.

Salmon Cakes

  • 2 pounds salmon
  • 1T salt
  • 2-4 T avocado or olive oil
  • 6T chopped chives fresh
  • 4T chopped parsley fresh
  • 3T chopped dill fresh
  • 4 large cloves garlic minced
  • 1tsp ground black pepper
  • 1T Dijon mustard
  • 4 eggs
  • 2/3C almond flour
    Dipping Sauce
  • 7T paleo mayo
  • 1 clove crushed garlic
  • Juice of 1/2 a lemon

  1. Generously salt the salmon.
  2. Prepare the grill with 1T avocado or olive oil.
  3. Grill the salmon until cooked through. This should take 3-4 minutes on each side depending on the heat of the grill.
  4. In a large bowl, break up the cooked fish into meat chunks. Allow to cool.
  5. Once cooled, add the chives, parsley, dill and garlic.
  6. Stir together, mashing the meat into the seasonings.
  7. Add in the pepper, Dijon mustard, eggs and almond flour.
  8. This will turn the meat into the right texture for patties.
  9. Using the rest of the oil, heat up a medium-large pan.
  10. Using your hands or 2 spoons, form small balls with the salmon mixture.
  11. On medium heat, fry the patties 2 minutes per side.
  12. They are done once they turn golden brown.
  13. In a small glass bowl, prepare the dipping sauce. Refrigerate until all the cakes are done.
  14. Pair with brown rice and seasonal veggies for a complete meal.
