Jam Sandwich Cookies

My daughter asked me approximately 50 million questions today. She wanted to do the dog’s hair, try on 3 different princess dresses and eat her food in the living room like she couldn’t hear me specifically say not to. She wanted to play with kitties and cuddle in the sunshine. Then have more snacks and do my hair💁 Don’t forget the endless dancing in between each activity.

Enjoying my kids looks different every day. Some days it means listening to their feelings while sitting across from the teddy bear sipping tea. Other days it’s becoming a sumo wrestler 10 minutes before bed time. I have three children, all unique and important. Children are a joy, and to be enjoyed. They will thrive in an environment that allows them to be who they are while still challenging them to grow into incredible humans.

Today I chose to allow for the interruptions. I decided to enjoy each moment and do my best to answer the never ending questions. Life goes by fast. Each moment in my child’s life is valuable and can’t be taken back.

I slowed down and made some cookies. The day seemed longer and those notes on my to-do list that were oh so important faded into the background. No deadlines were missed, no projects turned in late. The house got a little dirtier, and the kitchen floor turned into a dance floor while cookies baked. Too much powdered sugar was used and many of these jam sandwich cookies were eaten before the camera came out.

Enjoy these cookies, they are a healthy spin on a classic. Jam sandwich cookies have been around for years. The cookies is crunchy and lightly sweet while the jam is tart and fruity. Eating these reminds me of my own days dancing in the kitchen while baking with my mom.

Jam Sandwich Cookies

Yield: 24 jam sandwich cookies

Instructions

  1. Preheat the oven to 375°. Spray a cookie sheet with coconut spray.
  2. In a large glass bowl, combine all ingredients except for the jam.
  3. Mix until a stiff dough is formed.
  4. Refrigerate for 20-30 minutes.
  5. Prepare a clean surface with brown rice flour sprinkled on. Tapioca flour is great for this too is you prefer.
  6. Using half the dough, roll it out on the floured surface.
  7. Get the dough about 1/4 to 1/2 inch thick. Cut them into rounds. I used 4inch cutters.
  8. Place 5 on the cookies sheet. Next cut a set of five circles in the middle using the small circle. Mine is an inch in diameter.
  9. You should now have 5 circles and 5 "doughnuts". Put the holy circles on the cookies sheet and bake for 9-10 minutes.
  10. Wait for the cookies to cool completely, then dollop a little amount of jam on the cookie and place the top on it so the jam shows through.
  11. Optional: Sprinkle powdered sugar over them for a classic holiday look.
