I’ll be the first to admit drinks are not my area of expertise. I can bake, cook and sometimes clean. Okay, I clean a lot but my house rarely reflects it. Making drinks however is an entirely new realm to me. I love a challenge! This week’s challenge is Pomegranate Margaritas. pomegranate margaritas

Well, what do ya think? The flavor is unbelievable and the consistency is like that of a slushy. So good! Bold, beautiful and just in time for Cinco De Mayo. Add a splash of lime, grab the salt and enjoy the weekend with friends. Or, if you’re anything like me, add the splash of lime, extra salt and start drinking an hour after the kids go to bed while watching Friends. Thus is the life of a mom of three. I don’t go out much, okay?pomegranate margaritas I used my Vitamix for this and highly suggest you purchase one for your home. I use mine every day for tasks like oat flour, paleo mayo, smoothies, and even brownie batter! I’m not an affiliate for Vitamix, but did leave a link for you to Amazon. Honestly we are so happy with our blender. I can’t remember what life was like without it.

These turned out so well, I may just take on a few new drink ideas. I’m thinking pineapple, coconut & mango would pair well together. Do you have recipe suggestions for me? Pomegranate Margaritas

Yield: 4 margaritas

Ingredients

  • 5 cups ice
  • 1 cup “1800” tequila
  • 2 oz. triple sec
  • 2/3 cup Skylake Ranch Pomegranate Grenadine
  • 1 can of frozen limeade concentrate (or make your own homemade limeade and freeze it)
    For Garnish
  • 2 limes, quartered
  • coarse salt
  • optional: pomegranate arils

Instructions

  1. In a blender, pour all ingredients in minus the lines and salt.
  2. Blend until you have a "slush" consistency.
  3. Pour the salt onto a small plate and wet the rim of the glass with lime.
  4. Turn the glass upside down, twisting slightly to get the rim salted.
  5. Pour the margarita into the glass and garnish.
