Sausage and Vegetable Strongman Soup


Homework. I thought I was done with the stuff after college. Joke’s on me! I really should have known better. Three kids later and a job with deadlines means I have homework coming out of my ears. Every day. Even on weekends.

If patience is a virtue then homework brings out the necessity for said virtue on a daily basis. I recently saw a video from the hilarious Holderness family about what wine to pair with various homework subjects. I laughed so hard and sent it to all my mom friends going through the same stage of life right now. You can see it here.

I’m not sure if a glass of wine would really help me get through the homework hours, but it definitely sounds ideal. In reality, I’m usually sipping on my second cup of coffee or a large cup of ice water while helping everyone with homework. And while I cannot say it’s a little slice of heaven every time, I will say this. Doing homework with my kids is a joy. I love helping them learn. Watching them grown before my eyes. Working through a problem together. On days when they’re frustrated, I love that I get to hold their hand through it. I wouldn’t have it any other way. sausage vegetable soup

Do you know what’s really annoying? Our homework routine usually includes me jumping up five times to keep an eye on dinner. It’s probably hilarious to watch, but very tiring. I don’t know how you guys do it, but I have to get both done simultaneously. Otherwise dinner would be done by 8pm or homework pushed to early mornings. There is one dinner that doesn’t leave me in a flurry. This soup. Sausage and Vegetable Strongman Soup is so easy, I only have to check on it twice while I help the kids with homework. Filled with nutritious veggies, savory garlic and turmeric, it packs quite a loaded punch. And why is it called strongman soup? One, the health benefits. Sausage and Vegetable Strength Soup

Yield: 8-10

  • 2 lbs. pork sausage
  • 16 oz. bone broth (or broth of your choice)
  • 1 onion, diced
  • 6 medium red potatoes
  • 3 carrots, diced
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 bell pepper, diced
  • 2 cups fresh spinach
  • 1 T olive oil
  • 1 tsp turmeric powder


  1. In a large dutch oven pot, heat the olive oil on medium-high heat.
  2. Brown the sausage.
  3. Keeping the heat on, add in the vegetables and broth.
  4. Stir in the garlic, pepper, salt and turmeric.
  5. Heat to boiling, then reduce to a simmer for an hour.
  6. When it comes to spinach, most like to add it in right at the end. I personally like it either way, so feel free to do what works for you.
  7. Serve immediately.
