Gone are the days of summer. Hello fall! My family celebrated the end of summer with one last batch of lemonade, homemade popsicles and a final dip in our little inflatable pool that’s now put away. By “put away”, I mean the dog took a bite of it and we weren’t able to repair it this time.🐶
Have you ever noticed the seasons change just when you yourself need a change? Perhaps it’s me, but I was really starting to resent the 110° weather and feeling like my skin couldn’t take much more sun lotion. The kids have been wanting to play outside all afternoon. If you’ve yet to experience Northern California weather, that translates to nearly impossible during the heat of the summer.
Now we can go out all day any day and even grab a light sweater for the cooler evenings. Just last weekend we were out at the soccer field by 8am and actually feeling cold! I almost forgot what that felt like.
This lemonade is strong and full of flavor. I’m going to turn the next batch into popsicles to see what the kids think. While we enjoy the cooler weather, we love popsicles all year long. Is that weird?
Fresh mint is the way to go when making this. Don’t try to use mint extract. The real deal is what you want here. Muddling mint is a really important step to getting the full flavor. See below for a quick visual of what that looks like.
Sparkling water makes this drink bubbly and fun. I’m not a soda drinker, but a carbonated drink like this is tasty! I used some stevia packets to slightly sweeten it up. Believe it or not, but drinks don’t need loads of sugar dumped into them to be enjoyed.
